How to make it
5 steps. Take it one step at a time.
Thoroughly wash the fresh mint leaves
Thoroughly wash the fresh mint leaves in cold water and pat them dry.
Combine the sugar and water
In a medium saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar is completely dissolved.
5 minAdd the mint leaves and the lemon juice
Once the syrup is boiling (100°C/212°F), add the mint leaves and the lemon juice. Submerge the leaves completely using a spoon.
1 minRemove the pan from the heat
Remove the pan from the heat, cover with a lid, and let it steep for at least 20-30 minutes, or until the syrup has cooled to room temperature.
20 minStrain the syrup through a fine-mesh sieve or cheesecloth
Strain the syrup through a fine-mesh sieve or cheesecloth into a clean glass bottle. Squeeze the mint leaves to extract all the flavor.
A little kitchen wisdom
Use the freshest mint possible for the best color and flavor. This syrup is much more potent and less neon-green than store-bought versions.
