How to make it
4 steps. Take it one step at a time.
Combine the minced garlic, ground cumin, dried oregano, salt, black pepper
In a heat-proof bowl, combine the minced garlic, ground cumin, dried oregano, salt, black pepper, and sour orange juice. Whisk until well combined.
Heat the extra virgin olive oil
Heat the extra virgin olive oil in a small saucepan over medium heat for about 3-5 minutes until it is hot and shimmering, but not quite smoking.
4 minCarefully pour the hot oil
Carefully pour the hot oil over the garlic and juice mixture. It should sizzle vigorously. Stir to incorporate.
Let the mojo sit
Let the mojo sit at room temperature for at least 10 minutes to allow the flavors to meld and the garlic to soften.

A little kitchen wisdom
If you cannot find sour oranges (Naranja Agria), use a mixture of 2 parts orange juice to 1 part lime juice and 1 part lemon juice. For the best flavor, let the sauce sit for at least 30 minutes before using.
