How to make it
5 steps. Take it one step at a time.
Place the stale bread
Place the stale bread in a bowl and cover with water. Let it soak for about 5-10 minutes until soft.
10 minRemove the bread from the water and squeeze it very thoroughly
Remove the bread from the water and squeeze it very thoroughly with your hands to remove as much moisture as possible.
Blend the grated onion
In a food processor, blend the grated onion until it is almost a paste. Add the tarama (fish roe) and the squeezed bread, and process until well combined and smooth.
With the motor running, very slowly drizzle
With the motor running, very slowly drizzle in the olive oil and lemon juice in alternating small amounts, similar to making mayonnaise, until the mixture is thick, creamy, and emulsified.
Taste and adjust
Taste and adjust with more lemon juice if needed. Transfer to a bowl and chill for at least 30 minutes before serving to let the flavors develop.

A little kitchen wisdom
Use white tarama for a more refined flavor, though pink is more common. Ensure the bread is very well squeezed to prevent the dip from being watery.
