How to make it
5 steps. Take it one step at a time.
Wash the dried soybeans
Wash the dried soybeans and soak them in plenty of water for 8-12 hours (overnight). The beans should double in size.
Drain and rinse the soaked beans
Drain and rinse the soaked beans. Place them in a blender with 1.2 l (5 cups) of fresh water and blend on high speed until completely smooth.
2 minPour the blended mixture through a nut milk bag or a very fine sieve lined
Pour the blended mixture through a nut milk bag or a very fine sieve lined with cheesecloth into a large pot. Squeeze the bag firmly to extract all the liquid.
Bring the soy milk
Bring the soy milk to a boil over medium heat, stirring constantly to prevent the bottom from scorching. Be careful, as it will foam up quickly when it reaches boiling point at 100°C (212°F).
10 minReduce the heat to low and simmer
Once boiling, reduce the heat to low and simmer for another 10-15 minutes. Skim off any foam that forms on the surface. Stir in sugar to taste while hot.

A little kitchen wisdom
Always ensure the soy milk boils completely and then simmers for at least 10 minutes. Raw or undercooked soy milk contains enzyme inhibitors and can cause digestive upset. You can adjust the water ratio for a thicker or thinner consistency.
